This version of strawberry shortcake crumbles DOES NOT have vanilla pudding mix, but it does have strawberry gelatin mix. The strawberry gelatin is that pink punch of color and flavor.
Simply mix 1/2 cup flour and 1/4 cup butter with the strawberry gelatin mix. In a separate bowl mix 1/2 cup flour, 1/2 sugar, 1/4 cup butter and 1 teaspoon vanilla. Yes, you can make this gluten free too, click for my Gluten Free Flour Mix, made with Bob’s Red Mill products.
Sprinkle all of the strawbery mix on a parchment lined baking sheet. Then sprinkle on the vanilla, slightly mixing as you go. Bake for 7 to 8 minutes @ 350 F, and let cool for at least 1 hour.
Once completely cooled it will crumble up together perfectly. If there are any large globs, just break them up with a rolling pin or by hand.
I made the strawberry shortcake crumbles specifically for a Strawberry Shortcake Freezer Pie . Good thing I added these little nuggets of goodness to the pie first, because the leftovers are disappearing!
Wouldn’t’ these be great on a chocolate cream pie, like French Silk or Lemon Fluff Pie? And think of the other fruity “shortcake” possibilities: orange shortcake crumbles, lemon shortcake crumbles, orange, etc.

- One 3-ounce box strawberry flavored gelatin
- 1 cup all purpose flour (divided) (for gluten free, use gluten free flour in place of all purpose flour)
- 1/2 cup butter (divided)
- 1/2 cup sugar
- 1 teaspoon vanilla
- Preheat oven to 350 F.
- In a medium sized bowl stir the box of gelatin and 1/2 cup flour and 1/4 cup butter. Use a fork to make fine and crumbly.
- In a separate medium sized bowl stir 1/2 cup flour, 1/2 cup sugar, 1/4 cup butter, and 1 teaspoon vanilla. Use a fork to make fine and crumbly.
- On parchment lined baking sheet sprinkle on the strawberry crumbles. Then sprinkle on the vanilla crumbles, ever so slightly mixing them by hand.
- Bake for 7 to 8 minutes at 350 F. Do not stir at all. Remove from oven and let cool completely (at least 1 hour) . If they feel warm, place the baking sheet in fridge or wait another 30 minutes.
- Crumble into an airtight container to store.
- Makes 3 cups of strawberry shortcake crumbles.

STEP ONE: Preheat your oven to 425 degrees F and grease a 9×13 dish with your preferred cooking spray. Now, prepare your shortcake. Melt the butter and set it aside so that it can cool. Whisk your eggs, then add the butter and the rest of the ingredients to a large mixing bowl. You want the batter to be thick and a little bit sticky! Pour it into the dish and smooth so that it’s level. Bake for 14 to 18 minutes, or until the top is golden brown.
STEP TWO: While your shortcake cooks, prepare your strawberry crunch topping. Place the Oreos in a Ziplock bag and use a rolling pin to crumble them into coarse pieces. Ideally, you want a mixture of very small crumbles and some larger chunks. Place in a medium bowl and pour melted butter a little at a time, making sure to stir between pours. Follow the same process with the gelatin powder. Make sure that the Oreos are completely covered with both!
STEP THREE: Allow the shortcake to cool for 1 hour. Then, spread the cream cheese frosting on top of the cake. Add the strawberry crunch topping along with sliced strawberries (optional, but I love the addition of fresh fruit!). Cut and enjoy!

Step By Step Instructions To Make Strawberry Shortcake Crumble Topping
Pre-heat the oven to 350 degrees.
Melt the butter in the microwave until it is completely melted.
Use a rolling pin to crush your golden Oreos after placing them into a Ziploc bag. Use a meat mallet or food processor that has a smooth side. Crumble the meat into small bits.
Crush the Oreo cookies and place them in a bowl.
Mix together the strawberry Jell-O and Oreo crumbles.
Mix well the Jell-O and Oreo mixture with half of the melted butter. You can add more melted butter if you think your mixture needs it.
Put parchment paper on a baking sheet.
Put the strawberry crumble on a baking sheet and smooth it out into an even layer.
Bake for 7 to 8 minutes.
Remove the baking sheet from the oven and let it cool.
Put the crumble back into the Ziploc bag after breaking it into chunks. Recrush it.
