I love boba, just a little about me. AKA pearl milk tea or bubble tea. The chewy, velvety pearls give drinks texture and up the ante in terms of enjoyment. Milk teas with pearls, matcha milk tea, earl grey milk tea, and taro milk tea have always been my favorites. Although my body and bank account would certainly despise me for it, I could definitely drink these every day. Are beverages really SO pricey these days, or is it just me?

But I do have a remedy for that—create your own! Making your own boba pearls is a game-changer if you have the time, albeit it may take a little while. They come out with the ideal balance of softness and chewiness, which is impossible to get with store-bought quick pearls. Moreover, you can make them in any color you like! You could even create the rainbow if you wanted to.

Also, rolling each boba pearl is a really soothing process.

Strawberry and Lime Sparkling Boba


There are a couple of things to keep in mind when making boba from scratch!

  • Don’t forget the cornstarch!
    • The most annoying thing when making boba is when they stick together. If you don’t fix that you’re going to be cooking a giant floating mass of boba.
    • What I like to do is make a small mound of cornstarch on the side and put the pearl straight into the cornstarch after I’ve rolled it. That way they will all be covered!
    • It doesn’t matter if there is heaps of cornstarch as you can always dust it off.
  • Storage
    • Once you have cooked them place them straight into the strawberry/lime syrup. This keeps them from sticking together while allowing them to take on some flavour.
    • If you don’t have the syrup made, or just want the boba by itself mix a couple of tablespoons of sugar with the hot boba to create a quick sugar syrup that will keep all the boba apart
  • Eat them as soon as possible!
    • Boba tends to firm up over time, or when they are cold. Try to eat them as soon as possible, or just cook them as you need them. You can store uncooked boba pearls in the freezer and cook them when the craving hits!


Now if you want to up your game and create a fun cocktail for a night in it’s an easy twist, and it tastes SO good.

Just add a shot of vodka!

Strawberry and Lime Sparkling Boba

  • Cook Time: 30 minutes
  • Total Time: 60 minutes
  • Yield: 4




  • ½ cup Tapioca starch
  • ¼ cup Boiling water
  • a drop Red food colouring
  • Cornstarch


  • 1 cup Diced strawberries
  • ¼ cup White sugar
  • ½ Lime
  • 1 l Sparkling water
  • 4 Lime wedges



  1. Add strawberries and sugar in a small saucepan
  2. Squeeze the juice from the lime wedges into the strawberries and place the skins in the pan too
  3. Heat over medium-low heat for 15 minutes, stirring to prevent burning
  4. Remove from heat and set aside


  1. Combine the tapioca starch and hot water in a medium basin. Stir until barely incorporated, then knead until smooth.
  2. After the color is evenly distributed, add the food coloring and knead (if dough is too sticky you can add a little more tapioca starch)
  3. To prevent sticking, roll the dough into little balls and sprinkle with cornstarch as you go.
  4. A large saucepan of boiling water should be used to cook the balls. Cook them until they float to the top, then turn off the heat and let them sit for five minutes (if you like them softer you can cook them for longer)
  5. Place the strawberry/lime syrup after draining.


  1. In a glass place 3 heaped tablespoons of tapioca pearl/syrup mixture and ice
  2. Squeeze in a wedge of lime, top with sparkling water
  3. Serve! (mix well before drinking)

Ingredients you’ll need

Strawberry Bubble Tea

  • 1/4 cup tapioca pearls
  • Handful of fresh strawberries
  • 1/2 cup of creamer (almond milk, soy milk, oat milk etc)
  • Handful of ice
  • Tea of your choice (green tea works well)
  • 1-2 tbsp of sweetener (honey, simple syrup etc)

How to Make Strawberry Bubble Tea

Step 1

The longest step is the first one.

Let’s bring a pot of water to a rolling boil, then once it is, let’s steep our green tea leaves in it. Use an electric water kettle to speed up this process even further.

They are available at your neighborhood department store. However, if you live in the modern era, you can just order it from Amazon. As we have a Cosori in our office, we advise purchasing from them.

We’ll also be boiling water in a separate pot at this time to prepare our tapioca pearls.

Be sure to follow the instructions if you purchased tapioca pearls like these in-person or online. On the back of the packaging, there are cooking directions for tapioca pearls.

Depending on how tough they are, we typically simmer tapioca pearls for 7 to 15 minutes. A helpful hint is to give your boba pearls a test run right when you anticipate they will be ready. enjoy having some pasta. Only to make sure the texture is the desired consistency.

To a large extent, it relies on the tapioca pearls you purchase. To determine how long to boil anything for, check the labels on the back. Certain boba pearls, like this one, can be finished in a flash!

Step 2

Tea should be removed from the heat and left to cool. In the interim, it will still take some time for your boba pearls to reach the proper texture.

Just make sure to gently stir it as the time passes.

Tapioca pearls frequently attach to themselves or the pot.

We’ll add the other ingredients at this stage. Take 1/2 cup of your preferred creamer, such as whole milk, oat milk, almond milk, or soy milk. Combine it with your strawberries in the blender.

Wait a couple more minutes until your tea has reached room temperature. After that, pour the just-brewed tea into your blender.

Step 4
