I’m going to tell you how to make strawberry with cream. You may be asking, “how many strawberries do I need?” or “what is vanilla extract?”. Keep reading and I’ll help you figure out those questions.

Strawberry Cream

Strawberry with whipped cream is a dessert that is popular in Mahabaleshwar (a hill station in Maharashtra, India). It is served in almost all hotels and restaurants there.
What is served there is usually in tall glasses, but I have served in ice cream cups as this is a rich dessert. I have used fresh cream which is 25% fat and is basically a light cream. You can easily use 35% to 50% fat cream also known as whipping cream or heavy cream.
This recipe is a simple version of strawberry cream similar to a mixed fruit cream recipe. I have not used ice cream in the recipe. Though you can add one or two scoops of Vanilla Ice Cream or Strawberry Ice Cream.
Strawberry cream makes for a nice fruity dessert that can be served after meals. Along with strawberry cream, one more recipe which is a popular snack in Mahabaleshwar is corn patties.
How to make Strawberry Cream
1. Rinse, hull and chop 250 grams strawberries. Take them in a bowl.

2. Add 1 tablespoon sugar. This step of macerating strawberries is optional and only if the strawberries are tart and not sweet. If the strawberries are very tart, then you can add more sugar.

3. Mix the sugar very well and keep aside for 20 to 30 minutes.

4. Later take 1 cup chilled cream and ¼ cup powdered sugar or icing sugar in a bowl. I used powdered sugar.

5. On a medium-high to high speed whip the cream+sugar till soft peaks. You can use a stand mixer or an electric beater to whip the cream.

6. Whip till the cream gets soft peaks.

7. Add ½ teaspoon vanilla extract.

8. gently fold in the cream

9. This is the macerated strawberry+sugar mixture. You will see some juices also released by the strawberries.

10. Take serving bowls or glasses. Layer them first with some of the strawberry mixture. Also add a bit of the juice.

11. Then layer with the whipped cream.

12. Again add some of the strawberries and the juice.

13. Repeat again with some of the whipped cream.

14. Lastly Garnish with some slices strawberries and serve. you also can chill for a few hours and then serve.

Strawberries and Cream (Fresas con Crema) is a traditional Mexican dessert recipe made with la lechera (sweetened condensed milk), whipping cream, sour cream, and strawberries.

Sometimes it’s the most simple treats that are the most delicious, am I right? I’m talking fresh peaches and ice cream, rice krispie treats, and of course this deliciously simple strawberries and cream.
My first experience with fresas con crema (as they call this dessert in Mexico), was when my husband and I lived in Puebla, Mexico for a few months when we were first married. I immediately loved it and set out to learn what was in it!
What is fresas con crema?
Fresas con crema (or Strawberries and cream) is a popular Mexican dessert that uses 6 simple ingredients and takes just a few minutes to throw together.
The cream sauce is made by combining sour cream (or substitute plain Greek yogurt) with evaporated milk, heavy cream, sweetened condensed milk and vanilla. The sauce is poured over fresh strawberries and served in a cup, with a spoon.
You could even use frozen strawberries if you’d like, and we like to add a dollop of whipped cream or easy whip on top!
La Lechera is most commonly used in Mexico to make this recipe, but you can use any brand of sweetened condensed milk. It’s a light and refreshing dessert that can also be enjoyed as a quick snack.

How to make Strawberries and Cream:
- Slice the strawberries into thin slices.
- Add the sour cream, evaporated milk, heavy cream, sweetened condensed milk and vanilla to a mixing bowl.
- Beat with electric mixers for 2 minutes.
- Spoon ½ cup of fresh sliced strawberries into a cup. Pour ½ cup of the cream mixture over the top.
- Serve with whipped cream on top, if desired.

Is Fresas con Crema made with la lechera?
Any brand of sweetened condensed milk will work for this recipe, including La lechera sweetened condensed milk. It’s popular in Latin America to use the la lechera brand, though any brand will work.

Prepare the strawberries: Remove the green stems from the strawberries and cut until they’re all roughly the same size. You may need to cut larger strawberries into quarters.
Sugar the strawberries: Add the chopped strawberries to a bowl with granulated sugar and toss to combine. Set aside for 5 minutes until all the sugar is dissolved.
Prepare the cream: Stir the vanilla extract into the cream until fully incorporated. If you’d like, whip the cream slightly so it’s a little thicker.
Assemble: Evenly distribute the sugared strawberries into serving bowls or glasses, then pour the cream over the strawberries. Garnish with a sprig of mint.
VARIATIONS

Freezing: Due to the high water content in fresh strawberries and the change in the texture of cream once frozen, freezing is not recommended.
TOP TIPS
For a slightly thicker cream, whip the heavy whipping cream to infuse air until a thick foam is formed.
Choose bright vibrant red ripe strawberries for best results as they contain the best natural sweetness.
Make sure the sugar fully dissolves on the strawberries before pouring the cream over them.
You can eat this dessert right away, but it tastes much better after sitting in the fridge for at least 30 minutes to allow the flavors to incorporate.
STRAWBERRY CREAM RECIPE, FRESH STRAWBERRY DESSERT
Strawberry cream is an easy dessert you can whip up for your family or a get together. It is also popular dessert served in North India (Pune). Simpler version of Strawberry ice cream.
I got this inspiration to try this recipe after watching a Youtube video, where they had this in Mumbai street food episode. A must try recipe when strawberries are in season.:
When I tried strawberry lassi, I added a dash of cream to it and Vj told it was too yummy. We both were discussing how yummy the one we saw in the video would have been with Strawberries and cream.
So we bought another box of fresh strawberries and tried this.
I added to my (never ending) to eat list. I still have one more recipe to share and I am done with strawberry recipes. And hope my strawberry craving also is done with that!

This is basically a 3 ingredient recipe. All you need is strawberries, whipping cream or heavy cream, sugar. I don’t like to use artificial flavor or color as the mild flavor/ color is pleasant to eat anyways.

- 400 ml Whipping cream
- 10 fresh strawberries large
- ¼ cup sugar

- First clean the strawberries. Cut off the green part along a small portion attached to it.
- Reserve 6 for puree.
- Slice the rest of strawberries for serving. I slice the sides off and chop for layering. Other large middle slices, I use for serving.
- Place clean strawberries, sugar in a mixie. Grind smoothly. Divide a small portion (3-4 tablespoon for serving) and keep aside.
- Take whipping cream in a mixing bowl. I place my bowl over cold water to fasten the whipping process.
- Start beating with a electric hand mixer. keep whipping in circular motion covering all the cream until you get stiff peaks. Do not over beat. I took some ¼ cup of fresh cream for topping. It’s optional.
- Add the fresh strawberry puree to it and fold to mix in the strawberry.
- To serve: Take a tall serving glass. First I add a dash of strawberry puree. Then start with strawberry slices arranging in the sides if the glass as shown.
- Fill half way with strawberry cream. Top it with fresh chopped strawberries, little puree and again arrange sliced strawberries along the sides of the glass.
- Fill the cream and top it with again strawberry cream, fresh strawberries, puree.
- Finish with whipped cream, a dash of puree and a slice of strawberry.
- Chill before serving. Serve within 3-4 hours.
Notes
- You can boil the puree until shiny and a nice glaze is seen. Cool down and store and use when needed.
- If you have cream stabilizing issues, use icing sugar in place of sugar (use more quantity) as it has corn flour in it, it will help in stabilizing the cream.
- Portion control as it is full of cream (tread it just like icecream)
