VARIATIONS
- You are welcome to fill the chicken with another creamy cheese. Excellent choices include Boursin, goat cheese, and marscapone. Another excellent choice is seasoned cream cheese.
- The stuffing is enhanced nicely by the addition of chopped artichokes and spinach.
- Add bacon, chives, and cheddar cheese to the filling for a unique twist.
TIPS
- Use an Instant Read thermometer to check for doneness because the amount of time it will take to cook something depends on its thickness and size. When the temperature of the chicken hits 160 degrees, it should be taken off the heat. If you let it sit, the temperature will rise until it reaches the suggested level of 165 degrees.
- Never forget to use a toothpick or skewer to hold the filling in during cooking! To achieve even browning when you flip it, you might need to move it a little.
- I advise flinging just once. The filling may come out if you flip your sandwich too many times.

Crack Chicken Keto
Fried chicken, chicken parmesan, and this keto crack chicken are some of my favorite keto chicken dishes to prepare.
I’ve never been one to proactively plan my meals. I usually make decisions on the spot unless I’m hosting guests or planning a dinner party.
I’ll be loitering over the refrigerator around 5 o’clock, checking out what I have inside and what I can make for dinner. The three ingredients you’ll always find in my refrigerator—chicken breast, bacon, and shredded cheese—are what I use to make crack chicken 90% of the time.
What is crack chicken?
As the name implies, crack chicken is a delectable dish made by baking together chicken, bacon, cheese, and ranch flavor to make a quick, scrumptious, and hearty evening supper. It’s the kind of meal that even finicky diners will like and that you would prepare on a weekly basis.
I adore this recipe because it’s unintentionally keto! It uses low-carb and no-carb components, but you wouldn’t know it, is what I’m saying. It takes little preparation and is soothing, creamy, and cheesy. Although I prefer to bake it in the oven, you can also use a slow cooker or an instant pot.
What is crack chicken made of?
For the chicken
- Chicken breast fillets– Either four small chicken breast fillets or two large ones that have been sliced through the middle.
- Salt and pepper– To season the chicken before pan frying them.
- Garlic powder– Adds a light garlic flavor without needing any garlic.
- Butter– To fry everything in.
For the cream cheese filling
- Cream cheese– Softened to room temperature.
- Spice mix– Onion powder, garlic powder, dried dill, salt, and mustard powder are all mixed together to create a mock ranch seasoning mix.
For the topping
- Bacon– Thick cut bacon, because what else goes well with chicken and cheese?
- Olive oil– To fry the bacon in.
- Cheese– A mix of cheddar and mozzarella cheese to cover the chicken before baking it in the oven.
How do you make crack chicken?
The bacon should first be properly fried and crispy in a pan. Keep the bacon juices in the pan, then, when the butter is hot, add the chicken breast fillets with the seasonings. Chicken should be cooked until no longer pink. Fill a 9 x 13-inch baking dish with the pan juices and add the chicken on top.
The cream cheese and spice mixture should now be thoroughly blended. Spread the cream cheese mixture over the top of the chicken breast fillets after evenly distributing it among them. Bake for 15-20 minutes, or until the cheese is golden brown, then top with the bacon and cheese shreds.
Instant pot or slow cooker option
While I prefer the oven method for cooking this dish, you can also make it in the instant pot or the slow cooker. If you choose the slow cooker option, I recommend you shred the chicken and mix everything together, for the ultimate flavor explosion!
- Prepare the cream cheese mixture and chop your bacon before making the instant pot crack chicken. Spread the cream cheese over the seasoned chicken breast fillets in the bottom of an instant pot. Cook for 15 minutes on high, then top with bacon and cheese shavings. Before serving, remove the lid and give everything 10 minutes to sit.
- Chicken will be shredded after it has cooked, making the slow cooker version of crack chicken a little different from the traditional recipe. The chicken breast fillets should be placed in the bottom of a slow cooker, topped with cream cheese, and cooked on low for 8 hours or high for 4 hours. Shred the chicken with two forks after taking off the lid. Before combining everything and serving, add the bacon and cheese, cover the slow cooker, and let it sit for 10 minutes.
Tips to make the best recipe
- Don’t fried your chicken too much. While baking in the oven, the chicken will continue to cook. The chicken is prepared for consumption when its internal temperature reaches 165C.
- Ranch seasoning in a package can be used in place of the spice blend if you don’t strictly adhere to the keto diet (often found in the soup or salad dressing aisle).
Storing, freezing, and reheating tips
- To store: Leftovers can be stored in the refrigerator, covered, for up to 3 days.
- To freeze: Place the cooked and cooled chicken in a sealable baking dish and store it in the freezer for up to 6 months.
- Reheating: Either microwave the chicken in 20-second spurts until warm or in reheat in a preheated oven.

What does the name Crack Chicken mean? Everyone claims they cannot resist the cheesy chicken since it is incredibly addictive and delicious. The name is not something I came up with. I simply adapt a well-known recipe for my own purposes.
Ingredients
Chicken Tenderloins – Chicken tenderloins, also known as chicken fingers, are produced by cutting the narrow strip of meat on the inside of an uncooked chicken breast so that it is easier to cook.
Cream Cheese – I use full-fat cream cheese.
Mozzarella Cheese – Shredded mozzarella is great in this keto chicken recipe.
Scallions – Scallions (also known as green onions) are a type of onion that has a white or light green base.
Bacon Crumbles – Bacon Crumbles are small pieces of bacon that have been fried or oven-baked. They are often used on top of salads or side dishes, or as a garnish to other dishes.
Garlic Powder – Garlic powder is a dried and ground version of garlic, and is used as a seasoning.
Onion Powder – Onion powder is simply dehydrated, ground onion. Onion powder provides a way for one to obtain the flavor of onion without having to use an unpeeled fresh onion.
Dried Dill – Dill weed is often used in cooking and seasoning dishes because it has a very strong and distinctive flavor. It is a signature flavor in ranch dressing.
How To Make Keto Crack Chicken
The oven should first be heated. then apply cooking spray to a casserole. Your chicken tenders should be placed in the dish, then set away.
Step two is to combine all the seasonings in a bowl with the cream, softened cream cheese, half the mozzarella, half the bacon, and all the other ingredients.
Step 3: Combine thoroughly, then coat the chicken with the mixture.
Step 4: Top with scallions, sprinkle with the remaining bacon and cheese, and bake!
Variations
Use whatever cheese that you have or that suits your preferences. Depending on what I had in the fridge, we have used mozzarella cheese, pepper jack cheese, mild cheddar cheese, sharp cheddar cheese, and parmesan cheese. They have all performed admirably.
Sauce: To make the sauce a little thinner, put in some heavy cream, chicken stock, vegetable broth, mayonnaise, sour cream, or even marinara sauce. I typically combine mayo, cream cheese, and sour cream in my casseroles. In this dish, I really enjoy the flavor of the cream cheese on its own, but you can adjust the sauce to your liking.
Vegetables: If you want to add a vegetable to this keto chicken recipe, my favorite picks are spinach, broccoli, or cauliflower.
