CHICKEN SALAD

For any potluck, picnic, or any other summer party, my absolute favorite salad to prepare is this chicken and macaroni salad. I’ve been making it for nearly fifteen years now.

I first tried this recipe back when my family owned a restaurant, it was often our lunch special because it was so popular. That was my first experience with having sweet fruit in savory dishes and it blew my mind. If you haven’t tried chicken salad with fruit in it, can’t wait any longer. Try it now. A pop of fruity sweetness in a savory dish is an amazing food experience.

Over the years, I’ve improved this recipe and it’s about time I share my improved version of this salad.

HOW TO MAKE MACARONI CHICKEN SALAD

Cook pasta according to box instructions, drain, and set aside in a large mixing bowl.

Bring a medium pot of water to boil and season it with salt, pepper, and bay leaf. Add chicken and cook chicken over medium heat until fully done. Take chicken out and set side to cool until it can be handled.

Once chicken is cooled enough, dice it into small cubes and add it to pasta. Add chopped grapes and almonds to the bowl as well. Season with some salt and pepper and mix well.

In a small mixing bowl, whisk together mayo, sour cream, Worcestershire sauce, lemon juice, and grated garlic. Mix mayo mixture into the salad, making sure it’s all evenly distributed.

Refrigerate in an air-tight container for a couple of hours before serving.

HOW TO SERVE CHICKEN AND MACARONI SALAD

You can serve this chicken and macaroni salad on the bed of lettuce, as a salad. Add some fresh vegetables like cucumbers, bell peppers, and tomatoes and cheddar cheese cubes would go great with this chicken salad. 

Use large tortillas to wrap some spinach, chicken salad, slices of cheese, and fresh veggies to make this delicious chicken salad into a wrap.

You can wrap this chicken salad in lettuce to make low-carb lettuce wraps.

Serve this chicken salad with crackers at parties or as an appetizer. Slices of cheese and crackers will work very well with this salad.

Chicken Pasta Salad has many variations that I’ve been making for years! It’s one of my favorites once the weather warms up and the picnics begin. It’s easy to make and incredibly versatile. I like to serve it for dinner, then love eating leftovers for lunch the next day.

CHICKEN SALAD WITH PASTA

Chicken pasta salad is one of the best cold pasta salad recipes to enjoy during summer or warm nights. The combination of chicken, pasta, and fruit with the creamy dressing is delicious. The grapes add a burst of fresh sweetness to round out the flavors and everything pairs so well together that this chicken pasta salad with grapes is one everyone can enjoy.

CHICKEN PASTA SALAD RECIPE INGREDIENTS

  • Pasta: I enjoy using 6 ounces (half a box) of bow tie pasta, but you can use other noodle varieties if desired.
  • Cooked chicken: Use 3 cups of cooked chicken to pack this salad with meat. Tip: this is a great way to use up leftover chicken or that rotisserie chicken in the fridge.
  • Red grapes: While you could use any grape variety, the red ones are a little more sweet and add a nice color to the bowl. We want 1 heaping cup of red grapes so that there’s plenty.
  • Celery: With two chopped stalks of celery, we can add crunchy and refreshing green bites throughout the pasta salad.
  • Apple: We want a diced apple (peeled or not peeled) to add more fruit and crunch to the dish. Use a sweet or a tart apple depending on how you want it to taste.
  • Pecans: Adding 1/3 cup of chopped pecans is a great way to get an earthy crunchy flavor. You can chop whole pecans yourself or buy them pre-chopped to save time.
  • Sour cream: Adding a tangy creaminess to the dish is 1/4 cup of sour cream.
  • Mayonnaise: With 1/4 cup of mayonnaise we can add more creaminess to the salad.
  • Seasonings: We want 1/4 teaspoon of all-purpose seasoning, a dash of onion powder, and salt and pepper can be added to taste.

HOW TO MAKE CHICKEN PASTA SALAD

  1. Cook your pasta in salted water for 10 minutes.
  2. Drain and rinse the pasta under cold water for several minutes to stop the cooking process.
  3. In a large bowl, combine your cold pasta with the chicken, grapes, celery, and apple.
  4. In another bowl, whisk together the remaining ingredients for the dressing.
  5. Top the pasta with the dressing and then toss to combine.
  6. Serve salad chilled and keep your leftovers stored in an airtight container in the fridge. Enjoy!

What Is Waldorf Salad?

A simple salad of apples, celery, and a mayo/lemon juice dressing with the occasional handful of grapes and walnuts thrown in, a true Waldorf Salad is the classic sweet + crunch dish.

The first Waldorf Salad appeared well over 100 years ago as a part of a charity ball menu honoring St. Mary’s Hospital for Children. The soiree was held at the newly opened Waldorf Hotel, and the hotel has been serving them ever since.

Ingredients For Waldorf Chicken Pasta Salad

  • boneless, skinless chicken breasts
  • celery
  • green onions
  • red seedless grapes
  • sliced almonds
  • bowtie pasta
  • real mayonnaise
  • lemon juice
  • coarse ground black pepper & parsley

How To Make This Pasta Salad

Chicken. Combine chicken, green onion and celery in large bowl.

Dressing. Whisk together mayonnaise, lemon juice, pepper and parsley in a large measuring cup to create the dressing. Pour over top of chicken and mix until evenly coated.

Grapes & Pasta. Fold in grapes, pasta and sliced almonds, making sure all ingredients are evenly distributed. Top with extra cracked pepper for a littel extra flair and serve!

More Tips For Making This Recipe

  • For even more delicious flavor, toast the almonds before adding them to the salad or add a diced honeycrisp apple for a little sweet crunch.
  • Always use real mayonnaise when making this recipe.
  • Need a short cut? Use rotisserie chicken from your local grocery store!
