21/2 cups old-fashioned oats     OR 3 cups quick oats flakes*
11/2 cups (6 ounces) shredded coconut, divided use Half a cup (1 ounce) chocolate chips

Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter on medium speed until creamy.
