Baked chicken with panko bread crumbs is one of the best chicken recipes I’ve ever tried. The chicken is perfectly moist and tender while the crunchiness of the slightly burnt panko breadcrumb exterior provides a welcome contrast in texture. Now that we are in the thick of summer, I’m finding ways to keep the oven off and the meals light. This chicken dish is one of my family’s favorites. It is easy to make and it keeps well, making it a perfect dish to make ahead for lunches during the work week.

If you love fried chicken but don’t love the extra calories, you are in luck! This oven-fried chicken offers all the crispy goodness of deep-fried chicken without all of the fat. Simple ingredients like mayonnaise and honey mustard add a zesty tang, and the panko breadcrumbs create a nice, crispy crust. Serve up this chicken on a weeknight for the family as it is sure to be a crowd-pleaser. 

Ingredients

  • 2/3 cup mayonnaise
  • 1/3 cup Dijon honey mustard blend
  • 1/2 teaspoon dried tarragon, or thyme
  • 1 teaspoon dried parsley
  • 6 boneless, skinless chicken breast
  • 1 cup panko breadcrumbs
  • 1/2 cup fine dried breadcrumbs
  • 1/2 teaspoon salt
  • 1 dash freshly ground black pepper
  • 1 dash paprika, optional

Steps to Make It

  2. Heat oven to 400 F. Line a baking pan with foil and lightly grease the foil or spray with nonstick cooking spray.Line a baking pan

  7. Arrange chicken on the prepared baking pan.Arrange chicken

  9. Flip over and bake for about 10 to 15 minutes longer, or until cooked through.

Tips

  • This crispy panko-coated chicken is delicious as the star of the meal alongside vegetables and perhaps mashed potatoes, but there are other ways you can serve this delicious oven-fried chicken, perfect if you have leftovers. Turn the chicken breasts into a version of chicken Milanese and top with a salad of arugula and grape tomatoes dressed with balsamic vinaigrette, or slice and place atop a leafy green salad chock full of cucumbers, shredded carrot, and sliced olives drizzled with an olive oil-lemon juice emulsion.
  • For a quick lunch, cut into strips and place inside a tortilla filled with your favorite veggies, or place on a multigrain bun and top with lettuce, tomato, and onion along with a little bit of mayo. 
  • If you would rather skip the step of flipping the chicken while it bakes, you can place the coated chicken breasts on a cooling rack set over a baking sheet. The air will circulate underneath the chicken and crisp up the underside while baking.

Variations

  • If you would rather not have the slight tinge of sweetness in your oven-fried chicken, you can simply replace the honey mustard with just plain Dijon; mix with the mayonnaise and dried herbs and spread on the chicken as instructed.
  • If you are looking for a shortcut you can skip the dried herbs in the mayo mixture and use seasoned breadcrumbs instead of the plain when coating the chicken.
  • To add a bit of spice to this recipe, mix in a bit of hot sauce with the mayonnaise and mustard.

We tend to go non-stop during the school year and by the end of the night, I am ready to relax.

I don’t want to spend a lot of time in the kitchen, so I always try to find easy meals to fix. But it’s not always easy to find healthy things to make for my family if we’re in a rush. 

And as much as we love Chick-Fil-A, we can’t go there every night. 

I have a lot of simple breaded chicken breast recipes in my files to make life easier when we’re running from place-to-place and don’t have time to fix a large meal, and I love being able to fix something healthy and not spend too much time in the kitchen. 

This baked breaded chicken recipe is a little bit versatile because you can use almond flour or all-purpose flour as an ingredient, or switch out seasonings for different flavor.

The almond flour tends to give it a bit more flavor, and it’s healthier for you; however, the all-purpose flour works just as well. 

Plus, you can dip the chicken in marinara sauce, ranch dressing, or even ketchup.

What Is Panko?

Panko is Japanese-style breadcrumbs that are used in a lot of Japanese recipes. The bread is ground up into flakes and then dried, giving it a more crispy texture.

What Ingredients Are Needed For Panko Breaded Chicken?

  • Almond flour
  • Eggs

  • Grated parmesan cheese

How Do I Make the Breaded Chicken Recipe?

  1. First, add the almond flour to one bowl. 
  2. Second, add eggs to a second bowl and beat. 
  3. Third, add the Panko breadcrumbs, parmesan, and seasonings to another bowl. 
  4. Dip the chicken breast into the almond flour, egg mixture, and Panko breading mixture.
  5. Place the breaded chicken on a cookie sheet and bake for approximately one hour.

How Do You Reheat Breaded Chicken Cutlets?

  1. Place the day-old chicken on a cooking sheet and cover with tin foil. 
  2. Preheat the oven to 400-degrees and bake for approximately 20 minutes. 
  3. If the chicken is not crispy, remove the tin foil and bake for a few more minutes. 

What Is The Order Of Breading Chicken?

  1. Coat the chicken with flour
  2. Next, coat the chicken with egg
  3. Finally, coat the chicken with the breading. 

You can use Panko crumbs, which are usually a little more crunchy, or regular breadcrumbs for this recipe. 

Step-By-Step Instructions

  • Prep your bowls before getting the chicken out of the fridge to help speed along the process.

  • Start by adding the almond flour to a bowl.
  • For this recipe, you can use chicken cutlets, regular sized chicken breasts, or chicken tenders for this meal.
  • I used chicken breasts this time, but if we don’t need as much, cutlets are perfect. 
  • Again, you can use all-purpose flour instead of almond flour for this recipe.
  • The almond flour does give the chicken a bit more flavor and is healthier. If you’re trying to stick to a low-carb diet, the almond flour is a great choice for you.

  • Next, add the eggs to the bowl and beat them a little.

  • Add the Panko breadcrumbs to the third bowl, as well as the seasonings.

I used Mrs. Dash Garlic and Herb seasoning.

Optional Seasoning Choices

  • Onion powder
  • Garlic powder
  • Italian seasoning
  • Cayenne pepper
  • Chili powder
  • Your favorite seasonings

  • Finally, add the grated parmesan cheese to the bowl and stir together. 
  • Once you have the bowls ready, grab your chicken breasts from the fridge and get started dipping.

  • Take your pieces of chicken and roll it in the almond flour until it’s covered.
  • It doesn’t have to be completely covered, just enough to get some of that flavor on there.

  • Dredge the chicken breast into the eggs and flip it over, making sure it gets covered with egg wash.
  • This isn’t the prettiest picture, but you get the idea.

  • And lastly, dip the chicken into the breading and make sure it gets covered.

  • Place chicken breasts in a greased dish. Cover with tin foil and bake for about half an hour.
  • Then, remove the tin foil and bake thirty more minutes or until the internal temperature reaches 165-degrees. 
  • After it bakes, it’s ready to serve.

How Do You Get The Crust To Stick To Chicken? 

After dipping the chicken breasts into flour, dip them into eggs. The eggs will help bind the breadcrumbs to the chicken better.

You will still have some falling off when you go to cut the chicken, but for the most part, the breading should stick.

Panko Baked Chicken: A Healthy Comfort Food Meal

Panko Baked Chicken  is an easy weeknight dinner recipe your company will love.  Dipped in salad dressing, coated with parmesan herb panko then baked until crispy.

Today I’m excited to share with you a recipe for that my family has used for years, Panko Baked Chicken or panko-crusted chicken.  Its made in no time at all, with just a few ingredients you probably already have.

What is the difference between Panko and traditional Breadcrumbs?

  • Panko is made from bread that is cooked with electric current instead of heat from an oven.  Because of the way it is cooked, it essentially has no crusts on it.
  • In the cooking/preparation process, the bread is allowed to rise three separate times which makes the final panko very light and airy.
  • Panko Breadcrumbs are crispier when baked and doesn’t absorb the oil/fat as much as traditional breadcrumbs do.

Can I substitute regular breadcrumbs for panko breadcrumbs in this recipe for Panko Baked Chicken?

Technically yes you can sub them in a pinch.  However, I do not recommend substituting them because the chicken will not be as crispy once baked.  Many recipes use breadcrumbs for oven-baked chicken, but I prefer the lighter, crisper texture of panko baked chicken.

Tips for making this Panko Baked Chicken Successfully! 

The trick to making this healthy panko baked chicken is setting up the dipping station so that you minimize the mess and following a few simple tips when preparing the chicken before dipping them.

When you’re making the chicken, set the dipping station up into bowls that go in the order that you are going to use them.  The photo above is an example where I will first take a piece of the chicken, dip it in the dressing, then directly into the panko.

What you don’t see in this pic is the pic of the tray which is right next to it prepped for the oven.  It makes it easy to drop the finished dressed up chicken piece to go right on to the tray eliminating an extra holding plate.  

See?!  This tray was right there for me next to the dipping station!  You’ll notice a couple of things that will help you with making this recipe successfully in these prep photos.

  • I made sure and used thinner cuts of chicken so that it cuts down on the time in the oven for baking.
    • you can buy the chicken pre-cut thinly but you can save a little money by cutting them yourself.  When cutting them, you can then pound them to an equal thickness so they are all the same for even cooking!
  • I lined my baking sheet with parchment paper so that it was super easy to clean up afterward.
    • Basically, toss the paper and wash it.  No need for scrubbing off any excess coating that sticks to the tray if you use parchment paper!
  • Another added bonus is you have free time while the chicken is baking to work on your additional side dishes to serve with it.
    • You can also do like Jenni does here in her Sheet Pan Roast Beef and roast the veggies at the same time the chicken is baking right on the same pan.  (Two sheet pans work too! ).  Just be sure and cut the veggies into smaller bites because the chicken is only in the oven for about 30 minutes and that way your veggies will cook completely!

I suggest using Thousand Island dressing to use for dipping, but this recipe for Dressed up chicken is totally adaptable to what your family likes.  I’ve made it with Ranch Dressing and even a Blue Cheese dressing with rave reviews.

If you sub a different dressing I do highly recommend using a creamier style dressing… a simple vinegar and oil dressing doesn’t hold the coating as well during baking and gets kind of greasy.

Is Panko Bread Crumbs Healthy

Are panko bread crumbs healthy? This is a very common question. Panko is a Japanese-style bread crumb that is lighter and crispier than Western style bread crumbs. It is also lower in fat, but still retains its crispiness when cooked. I sure hope you had a chance to read my last post on the health benefits of panko bread crumbs. They are packed with vitamin B and iron. I am such a big fan of them because they work perfectly in recipes. Pancakes, fried chicken, meatloaf, you name it!

Do you like cooking? If you do, at least once in your cooking experience, you should add bread crumbs to your dishes. Bread crumbs is usually used for crumbing fried and baked foods to add crunchy and crispy taste. Also you will find bread crumbs as a topping in casseroles.
