I love peanut butter cornflake bars. They are a simple recipe that I tend to make once a year during the summer, and they always remind me of being young. Peanut butter cornflake bars. What a combination! How can anyone resist this? This recipe is really easy to make and doesn’t take too long. These are not only fun to make but they are also delicious to eat! Try these out and you won’t regret it.

No-Bake Crispy Corn Flake Chocolate Peanut Butter Bars Recipe

Crunchy cornflakes add a crisp, crackly texture to the already awesome combo of chocolate and peanut butter. And what makes these bars even better? You don’t have to turn on your oven to make them.

Notes:

  • A 9×9-inch pan can also be used.
  • Bars will soften at room temperature. For best results, keep chilled until ready to serve.

  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup creamy peanut butter
  • 1/2 cup light corn syrup
  • 1/3 cup light brown sugar
  • Pinch salt
  • 4 cups corn flakes, lightly crushed
  • 1/3 cup salted peanuts, chopped and divided
  • 1 teaspoon pure vanilla extract
  • 4 ounces bittersweet chocolate, finely chopped

Directions

  1. Line 8- by 8-inch baking pan with foil. In medium saucepan over medium heat, melt butter. Add peanut butter, corn syrup, brown sugar, and salt and continue to cook, stirring, until melted and smooth.
  2. Stir in corn flakes, 1/4 cup peanuts, and vanilla until just combined. Spoon into prepared pan and smooth top.
  3. In heatproof bowl over pan of barely simmering water (or in microwave), heat chocolate until just melted. Spread over top. Sprinkle with remaining chopped peanuts. Chill until firm, about 2 hours. Remove from pan and cut into 2-inch squares.

These easy peanut butter bars are made with just a handful of ingredients. As long as you have peanut butter, corn syrup, sugar, and corn flakes, you’re good to go! The sugar and corn syrup combine with the peanut butter to make the sticky, sweet coating for the cornflakes. Once it’s all combined you’ll have sweet and salty perfectly chewy bars.

TIPS FOR MAKING PEANUT BUTTER CORNFLAKE BARS

  • Prep: Before starting the recipe, make sure you remember to spray your pan with nonstick spray. If you don’t have cooking spray, you can lightly grease it with butter. This is important to make sure the sticky ingredients don’t stick to the pan. 
  • Peanut butter mixture: Put a saucepan over medium heat and add the peanut butter, corn syrup, and sugar. Stir the ingredients until they’re well combined and the sugar is dissolved, then remove from the heat. You could also do this part in a large, microwave-safe bowl. Microwave it at full power in 30-second increments, and stir between each microwaving session until it’s dissolved. 
  • Combine: Pour the peanut butter and sugar mixture into a large mixing bowl, then add the corn flakes. Mix until the cornflakes are all coated in peanut butter.

  • Peanuts: If you want some extra crunch in your Peanut Butter Corn Flake Bars, try mixing in whole peanuts or using crunchy peanut butter to replace the creamy peanut butter in the recipe. 
  • Peanut butter replacements: Instead of peanut butter, you can try other kinds of butter in the recipe like sunflower seed butter or almond butter.

These no-bake miso chocolate peanut butter cornflake bars are quick and easy to whip up and ridiculously delicious. See notes above for modifications to make this recipe gluten-free and/or vegan.


INGREDIENTS

  • 1 tablespoon coconut oil
  • 1 cup natural creamy peanut butter
  • 1/4 cup honey
  • 2 tablespoons white (shiro) miso paste
  • 1 teaspoon vanilla extract
  • 5 cups (5 ounces) cornflakes
  • 1 1/2 cups (9 ounces) semisweet chocolate chips
  • flaky sea salt

INSTRUCTIONS

  1. Prep the dish. Line a 9 x 9-inch baking dish with parchment paper.
  2. Make the cornflake filling. Heat the coconut oil in a large saucepan over medium-low heat until melted. Add peanut butter, honey, miso paste, vanilla extract, and stir steadily for 2 minutes or until lightly warmed. Remove from heat and stir in the cornflakes until they are evenly coated with the peanut butter sauce. Transfer the cornflake mixture to the prepared pan and use a silicone spatula (or the flat bottom of a glass or a measuring cup) to press the mixture down firmly and evenly until it is very compact.
  3. Make the chocolate topping. Heat the chocolate chips in a double boiler (or in the microwave in 10-second intervals) until completely melted, being careful not to overcook and burn the chocolate. Immediately spread the melted chocolate in an even layer over the cornflake mixture, using a spoon to create pretty swirls if you’d like.
  4. Chill. Refrigerate the bars for 2 to 3 hours or until firm. 
  5. Serve. When you’re ready to serve the bars, carefully lift up the parchment and transfer the entire batch to a cutting board. Use a chef’s knife to carefully cut the bars into squares. Serve immediately and enjoy!

TIPS FOR MAKING CORNFLAKE BARS

  • Check the sauce for seasoning. Feel free to give the peanut butter sauce a quick taste before adding in the cornflakes, to see if you would like to add in any extra miso or salt (especially since different brands of peanut butter can vary significantly with salt content).
  • Firmly pack the cornflake mixture. This will help the bars stay together so much better and not crumble once cut.
  • Store in the refrigerator. Keeping the bars chilled will also help them hold together, so be sure to store any leftovers in a sealed container in the fridge.

POTENTIAL RECIPE VARIATIONS

Here are a few ways that you’re welcome to customize this chocolate peanut butter cornflake bars recipe:

  • Make it vegan. Swap maple syrup (or your preferred sweetener) for honey, use vegan cornflakes, and use dairy-free chocolate chips (or chocolate bars) for the topping.
  • Make it gluten-free. Use gluten-free cornflakes and be sure to double-check that your brands of peanut butter and chocolate chips are certified GF.
  • Use a different nut butter. If you are trying to avoid peanuts, feel free to make these bars with almond butter, cashew butter, or sunflower seed butter.

The great thing about this recipe is that it takes less than 20 minutes to make, and calls for pantry ingredients that we pretty much always keep on hand. With a few simple tweaks, they can also easily be made gluten-free and/or vegan as well, making them one of our new favorite desserts to whip up for easy entertaining.
