Mayonnaise Chicken


Servings : Serves 4-6

A kind of easy-fix dinner that is flavourful and involves a small amount of stress-free prepping to put together. Leftovers are perfect when shredded for sandwiches or wraps.


  • 1 chicken, skin removed and cut into 8-10 pieces (1 to 1.5kg)
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tbsp tomato paste/puree
  • 1/4 cup yoghurt
  • 1/4 cup mayonnaise
  • 1 tbsp veg oil
  • 1 1/2 tsp salt
  • 1/2 tsp turmeric powder
  • 1 tsp black pepper powder
  • 1 tsp red chilli powder
  • 1 tbsp dried parsley or a handful of very finely minced fresh parsley or coriander
  • juice of 1 lemon


Clean and dry the chicken pieces. Whisk all the ingredients together until smooth and creamy, then add the chicken and mix well. Cover and refrigerate overnight or at least for a couple of hours.

Preheat the oven at 180 C. Place the chicken pieces in a glass baking dish cover with foil and bake for 30 minutes. Then turn the pieces over, cover again and bake for another 30 minutes. Finally remove the foil, turn the pieces one last time and broil the chicken under the grill for about 5 minutes for a nice colour.

For added flavour, you can smoke the cooked chicken by lighting a small coal, placing it on a piece of foil and putting it in the middle of the chicken dish. Drip some oil over the coal and when it begins smoking, cover the dish and allow the smoke to infuse into the chicken for about 1-2 minutes.

Serve with fries, fresh salad and a dip of your choice.

Ingredients for Chicken Mayo Salad Recipe

  • Boneless chicken breasts 2
  • Mayonnaise 2 tablespoons
  • Bay leaves 2-3
  • Black peppercorns 5-7
  • Spring onions with greens 1-2 finely chopped + for garnishing
  • Onion finely chopped 1/2 medium
  • Red bell pepper finely chopped 1/2 medium
  • Green capsicum finely chopped 1/2 medium
  • Corn kernels boiled 1/4 cup
  • Yogurt drained 3 tablespoons
  • Crushed black peppercorns to taste
  • Salt to taste
  • French bread slices 8


Step 1

Heat sufficient water in a non-stick pan, add chicken, bay leaves and peppercorns and cook on medium-high heat for 14-15 minutes.Drain excess water.

Step 2

Roughly tear poached chicken and place in a bowl. Add spring onions with greens, onion, bell pepper, capsicum and corn kernels and mix well. Add mayonnaise and yogurt and mix well. Add crushed peppercorns and salt and mix well.

Step 3

Put some chicken mayo salad over each French bread slice.Serve garnished with spring onions with greens.

This melt in your mouth chicken recipe is effortless to make with only 5 simple ingredients. Season chicken breasts with seasoning salt and black pepper, if desired. Place chicken breasts on a foil-lined baking sheet or baking dish. In a small bowl, combine mayonnaise with sharp cheddar cheese, ranch dressing mix, and cooked chopped bacon. Spread the mayonnaise mixture on top of the chicken breasts and bake in the oven until the chicken reaches an internal temperature of 165ºF.
