A delightful treat for weekend brunch, my Honeycrisp fritters recipe comes together quickly. There is no need to fuss with yeast because we are preparing fast fritters. After the fritters have been fried and cooled, I drizzle them with a homemade maple glaze that will have you dancing as soon as it touches your lips.
All the fresh fall smells and scents are combined in this single mouthful. And mercy, it’s delectable.
Before choosing the one I’m providing today, I tested this recipe a dozen times. Everything began as yeasted dough. Because my neighbors and friends enjoyed the first batch so much, I decided to share the recipe with you. However, after a few more unsuccessful attempts at recipe testing, I came to the conclusion that these apple fritters, while delicious, needed to be simple enough for us to whip up on a Saturday or Sunday morning for an autumn family breakfast or brunch. And the best way to accomplish so is to reduce preparation time by using a fast dough for the yeasted dough.
And to tell you the truth, today’s quick apple fritters recipe is just as delicious as it’s yeasted friend.
What are apple fritters?
Fresh diced apples and either a yeasted dough or a dough that includes a leavening agent, like baking soda or baking powder, are used to make apple fritters. Apple fritters that need to rise require more time to prepare. In the rapid variant, leavening chemicals are used to speed up the preparation time by helping the batter rise.
What ingredients do you need to make apple fritters?
- Flour: flour is used as the base of the apple fritters.
- Baking powder: Is the leavening agent used in this recipe to help the fritters rise. The carbon dioxide released when the baking powder (base) and the buttermilk (acid) combine aids in making the fritters light and airy.
- Sugar: We’re using sugar in the fritter batter for a bit of sweetness. But most of the sweetness will come from the glaze.
- Salt + flavorings: kosher salt, ground cinnamon, vanilla, and pie spice help flavor the fritter batter. You can use either apple pie spice or pumpkin pie spice for this recipe. Either works for this recipe. I usually have pumpkin pie spice on hand, so I toss that in!
- Eggs: you’ll need two large eggs at room temperature for this recipe. You’ll want to beat them before adding them to the fritter batter lightly.
- Butter: Melted butter is used in the fritter batter to help bring the dough together.

- Oil: You’ll want to use any high heat oil that you typically like to use for frying.

- Maple syrup: we’ll use a tablespoon in the maple glaze we’ll make to glaze the apple fritters

How to make the most delicious apple fritters:
- Preheating your oil should be your first priority.A candy thermometer should be placed inside a big pot or Dutch oven with the oil to ensure that the oil maintains the desired temperature.
- Create the fritter batter.In a bowl, combine the dry ingredients by adding them and whisking. Then combine the beaten eggs, buttermilk, and melted butter in the bowl. Add the diced apples and mix thoroughly.
- Cook the fritters.Using a cookie scoop measuring 1 1/2 tablespoons, pour the mixture into the fryer. If you used a saucepan, you should only fry 3–4 fritters at once so you can watch them carefully and prevent overcooking. The cooking time for them will be 3 to 4 minutes. With a slotted spoon, transfer them to a baking sheet covered in paper towels. Before glazing, let the fritters cool fully.

4 Tbsp unsalted butter
2/3 cups all-purpose flour
1/4 cup whole wheat flour
1 pinch of Kosher or sea salt
2 Tbsp low-fat or oat milk
1 egg yolk
2 firm apples (Honeycrisp, Granny Smith, Gala)
1/2 lemon, juice only
1 tsp corn starch
1 tsp organic sugar, evaporated cane juice
1/4 tsp cinnamon
2 Tbsp golden raisins (optional)
1 Sprig fresh thyme, leaves only (optional)
Basil Whipped cream
1/2 cup heavy cream
1 leaf fresh basil, minced
1 pinch sea salt, fine
1 tsp organic sugar
- In a medium bowl, combine the flours and the chilled butter.
- Using two knives or a pastry cutter, blend the butter into the flour mixture. As you mix the butter and flour together, add the salt.
- Just until the mixture is blended and smooth, add the milk and egg yolk. Stir together with a wooden spoon. Avoid overmixing.
- Refrigerate the dough for 30 to 60 minutes, or until well cooled, after carefully wrapping it in plastic wrap.
- To 1/8″ to 1/4,” roll out the dough. Place six 4″ circles, one at a time, on a baking sheet that has been lightly oiled.
- The apples should be washed, peeled, quartered, and the core removed. Slice thinly, then combine the remaining ingredients for the filling in a mixing dish.
- Place the sliced, seasoned apples in the center of your crust, leaving a finger’s width of space between the crust’s edge and the filling.
- To keep the filling in place, roll the crust’s edges inward. Brush the edges with beaten egg and add a small dusting of sugar for an additional touch.
- Bake the crust for about 15 minutes at 350°F, or until it is completely cooked through and golden.

You can use any of your favorite apples for the filling and as the season change; you can substitute any of your favorite fresh fruit or berries.

- Combine all of the ingredients in a large bowl and whip with a whisk until stiff peaks form. If you are whipping this by hand, use a medium bowl over ice for faster results.

- In a 10-inch skillet over medium heat, melt the butter and sauté until just faintly browned. Get rid of the heat.
- Combine the apples, cinnamon, ginger, nutmeg, salt, maple syrup, vanilla, lemon juice, and apple cider in a big bowl. Pour the mixture into the butter-coated skillet and stir to coat well.
- After placing the pastry on top of the apples, gently press down to seal it in place. Try your best to tuck the pastry’s sides beneath the apples. Garnish with coarse sugar and a brush of beaten egg. Bake the skillet for 20 minutes on a baking sheet. From the oven, remove. To make the “pandowdy,” cut the pastry into sizable squares using a sharp knife.4. Set the oven’s temperature to 350. Place the pan back in the oven and bake for an additional 20 minutes, or until the sauce is boiling through the crust cracks. If necessary, use foil to cover the top to prevent burning. - What’s the difference between apple pie spice and pumpkin pie spice? Apple pie spice contains cardamom in the spice mix, whereas pumpkin pie spice contains cloves. All the other ingredients (cinnamon, ginger, and nutmeg) are in both spices.
- What did you sprinkle on top of the fritter in the pictures? I just used sparkling sugar for pictures! It’s not really part of the recipe, just more so for pictures as it adds more interest. You could certainly add some if you’d like – it’ll give you some crunch and sweetness.
