Satay Chicken With Noodles


Satay chicken with noodles is a popular dish on many food stalls in Malaysia and Indonesia. The satay consists of bite-sized chicken marinated in spices and a peanut sauce. The Satay Noodles Recipes usually served with some rice and a side dish known as ‘noodles in gravy’ (Mie kueh) which is, simply put, noodles served in a thick flavorful gravy.

Chicken satay noodles

  • 1 tsp. 
  • vegetable oil
  • 500 g 
  • (1lb 2oz) chicken thigh fillets, cut into bite-sized pieces
  • ½ tbsp ground coriander
  • 3 tbsp. 
  • medium curry paste
  • 3 tbsp. 
  • crunchy peanut butter
  • 2 tbsp. 
  • light brown soft sugar
  • 165 ml 
  • tin full fat coconut milk
  • 150 g 
  • (5oz) sugar snap peas
  • 200 g 
  • (7oz) baby sweetcorn, chopped
  • Juice of 1 lemon
  • 300 g 
  • (11oz) fresh straight to wok egg noodles
  • Large handful fresh coriander, roughly chopped


  1. Heat the oil in a large pan and fry the chicken for 8min until golden and cooked through. Add the ground coriander and curry paste and fry for 1min more. 
  2. Stir in the peanut butter, sugar and coconut milk until combined, then add the vegetables and simmer for 3-4min until the veg are tender.
  3. Stir in the lemon juice, then fold through the egg noodles and most of the coriander. Heat until piping hot, add a little water to loosen the sauce if needed. Season to taste, then divide among four bowls, sprinkle over the remaining coriander and serve.

Satay chicken & noodles

Serve up delicious satay-style noodles with tender chicken and crisp vegies in just 15 minutes.

7 Ingredients

  • 450g hokkien noodles
  • 2 shallots
  • 1 tbsp peanut oil
  • 400g Lilydale Free Range Chicken Thigh, excess fat trimmed, cut into 3cm pieces
  • 180g green round beans, topped, halved
  • 1 carrot, peeled, thinly sliced
  • 125ml (1/2 cup) bought satay sauce
  • Select all ingredients


  • Step 1Place the noodles in a large heatproof bowl and cover with boiling water. Set aside for 5 minutes or until tender. Drain.
  • Step 2Meanwhile, trim the shallots and thinly slice diagonally. Heat a wok over high heat. Add half the oil and heat until smoking. Add the chicken and stir-fry for 5 minutes or until golden and cooked through. Transfer to a plate.
  • Step 3Heat the remaining oil in the wok over high heat. Add the beans, carrot and pale section of shallot. Stir-fry for 3 minutes.
  • Step 4Add noodles, chicken and sauce to the wok. Toss until heated through and well combined. Divide among serving bowls. Top with remaining shallot to serve.


Swap it: For a different flavour, swap the chicken thigh fillets for beef stir-fry strips.

This recipe is made using one of my master sauce recipe, this Peanut Sauce for Stir Fries. Like my All Purpose Stir Fry Sauce, it can be used for any stir fry or noodles using a “formula” (provided in the recipe) and forms the basis for many recipes I’ve shared over the years!

Peanut Sauce Noodles

This stir fried Peanut Sauce Noodles is made using the Peanut Sauce for Stir Fries that I published on Wednesday. In that post, I provided the sauce recipe and a “formula” to make stir fries using whatever you have. In this recipe, I’m providing specific ingredient quantities for the pictured noodle stir fry.

I won’t go on and on about the Peanut Sauce again because I did enough of that on Wednesday! In a nutshell – it’s a gem of a recipe, adapted from an original recipe given to me by a reader. One of those recipes that tastes a lot more complicated than it is – because Asian Peanut Sauces usually have a fairly lengthy list of ingredients, but this one is very straight forward.

A Satay Peanut Sauce for Stir Fries and Noodles - the flavour belies the short list of simple ingredients. This is a gem of a recipe - use the "formula" to make stir fries and noodles using what you have on hand.

If peanut butter sandwiches and basic Asian pantry essentials are a staple in your household, you can probably make these Peanut Sauce Noodles right now. The beauty of (most) stir fries is that there are no rules about what vegetables and proteins go into them. I’d say that 90% of the stir fries I make involve rummaging around in the bottom of my fridge, rather than specifically shopping for ingredients to make something.

Ingredients in Stir Fried Peanut Sauce Noodles

This Peanut Sauce Noodles recipe is made with leftover ingredients from Chicken Chow Mein I had the previous day. It has exactly the same ingredients:

  • chicken
  • onion & garlic
  • carrot
  • bean sprouts
  • cabbage

I like to use chicken thigh because it’s juicier than breast and tenderloin. If I make this with chicken breast, I always tenderise it using a Chinese restaurant technique using baking soda (bi-carb). It’s super simple, see directions here:

I like the combination of vegetables in this Peanut Sauce Noodles because they are stringy, “noodle shaped” if you will, so they sort of seem to disappear in the noodles once tossed through with Sauce. This stir fry serves 2 and there’s a fair mound of vegetables in this – over 4 cups. But looking at these photos, one would never guess.

Is Satay Healthy?

Satay is high in protein and fat. According to the Health Promotion Board, 10 sticks of beef satay has 7g fat and 24g protein while 10 sticks of chicken satay has 5g fat and 27g protein.
