TERIYAKI CHICKEN DON (TERIYAKI CHICKEN ON RICE)

Teriyaki Chicken Don is another donburi dish – Teriyaki Chicken on Rice in a bowl. When the food is so delicious on its own and comes with flavoursome sauce like Teriyaki Chicken, you really don’t need to do anything other than place the food on hot cooked rice. But I added a couple of vegetables to it because the bright colours make the dish look more attractive.

Today’s recipe refers to the Teriyaki Chicken recipe to make a topping, so it’s a very short post. This recipe explains how to cook vegetables and serve them on a bowl of rice.

WHAT’S IN MY TERIYAKI CHICKEN DON

  • Hot cooked rice in a serving bowl
  • Teriyaki Chicken ingredients with Teriyaki Sauce 50% more than required in the recipe

  • Green onions cut into 5cm/2″ long pieces

You get some teriyaki sauce when making Teriyaki Chicken, but you will need more sauce to pour over the rice. You just need to prepare more quantity of the teriyaki sauce when making Teriyaki Chicken.

You don’t have to use snow peas and green onions. I happened to have them in the fridge and the colour of the vegetables compliments the dish. Blanched spinach and grilled/sauteed red and green capsicum can work too. If you like egg, you can place a poached egg on top.

HOW TO MAKE TERIYAKI CHICKEN DON

Since Teriyaki Chicken is a quick and easy dish to make and it uses just one frying pan, I did not want to use another frying pan or griller to char the green onions.  Here is how to do that:

Follow the steps up to number 8 in the Teriyaki Chicken recipe card with the following variations:

  1. At step 4, add the green onion pieces to the frying pan after placing the chicken fillets in the pan (1st photo above).
  2. While cooking the chicken, cook the green onion pieces turning them over to get burnt in several places (2nd photo above).
  3. When the green onions are cooked, transfer them to a plate, before step 5 or 6.
  4. When condensing the sauce in step 7, reduce the sauce to about 3 tablespoons.
  5. Dribble some sauce on the rice in a bowl, then place the sliced chicken over the rice.
  6. Place the green onions and snow peas.
  7. Pour the sauce over the chicken and green onions.

I blanched my snow peas in the microwave by wrapping them in cling wrap instead of boiling them in a pot – no washing! But of course, you can quickly blanch them in boiling in a pot of boiling water.

Lately I’m completely obsessed with one pot meals. You literally make it all in one pot (or skillet). It’s the perfect meal for when you are in a pinch and don’t have a whole lot of time to make dinner. With three young kids who constantly need my attention, I find I have very little time to spend in the kitchen. This teriyaki chicken bowl recipe checks all the boxes for a healthy, delicious meal that can be on the table in no time. Just mix some chopped boneless skinless chicken breasts with rice and your favorite veggies in a large skillet and you’ll have rice bowls for the entire family to enjoy. This also works great as a meal prep recipe. Make a big batch one day and then store it in one-portion servings. If you need a quick meal just heat it up in the microwave.

Choosing the Rice

Not having to cook rice separately in the rice cooker or anything makes clean up so much easier. You throw the rice in uncooked and let it go. You will want to use long-grain white rice or jasmine rice. Calrose rice will get too sticky and brown rice will require longer cooking time. Some have asked if instant rice will work. Instant rice will throw off the cooking times as well. You will just want to adjust water and times according to the instant rice packaging. You can also try using cauliflower rice to keep this an even lower calorie meal. Or use a combination of long grain rice and cauliflower rice. The kids will never even know!

Variations to this Chicken Teriyaki Bowl Recipe

  • Feel free to use the frozen stir-fry veggie mix or any other vegetables you would like in with the rice. The more veggies, the better!
  • Add bell peppers, snow peas, shredded carrots, broccoli, green onion or cabbage, bok choy – anything you have in the fridge you can chop up and toss into the pan!
  • I have also added crushed pineapple before and it is delicious. 
  • Add extra flavor to your rice bowl with grated ginger, black pepper, a dash of rice vinegar, 
  • Try other meats in your bowls! Feel free to use chicken thighs you grill up outside, beef, salmon, rotisserie chicken from the store, just about any protein you want. 
  • Dress up your teriyaki chicken bowl with garnishes like sesame seeds, a sprinkle of brown sugar, or diced green onion. 
  • The teriyaki sauce that we like to use is the “Mr. Yoshida’s” or Trader Joe’s “Island Soyaki” sauce but you can use whatever you have on hand, or homemade teriyaki sauce. 
  • I like to add a little extra regular soy sauce or low sodium soy sauce on at the end as well, with a nice swirl of Sriracha sauce (we seriously go through Sriracha at our house like some go through ketchup… even my KIDS ask for it)!

WHAT IS TERIYAKI CHICKEN RICE BOWL? 

Chicken is grilled or pan fried, then it glazes with teriyaki sauce, served with rice and some vegetables. Teriyaki chicken rice bowl is a popular food among the United States Japanese fast food restaurants. It is because the savory and sweet teriyaki sauce goes well with meats and rice. Also, it is a quick and easy lunch and dinner. 

WHAT ARE THE INGREDIENTS FOR JAPANESE TERIYAKI CHICKEN RICE BOWLS? 

The ingredients are mainly chicken, rice, teriyaki sauce and vegetables. In this Japanese teriyaki chicken rice bowl recipe, I use chicken thighs instead of breast because thighs have better texture. Also, I use homemade teriyaki sauce. If you have store bought teriyaki sauce, please adjust the amount of sauce to your taste. Besides, I choose broccoli for the vegetables. However, you can use other vegetables if you like. 

COOKING TIPS FOR HOW TO MAKE CHICKEN TERIYAKI BOWL WITH RICE:

  • Marinate chicken with teriyaki sauce for at least 15 minutes before cooking. The best result is to marinate overnight in the fridge.
  • Cook rice in a pressure cooker or rice cooker. I like to use an instant pot pressure cooker to cook rice because it’s faster and the rice tastes better. 
  • If you use an instant pot to cook rice, wash and drain the rice well. Add 2 cups of rice and 2 cups of water. The rice and water ratio is 1:1. Level the rice and make sure the rice is covered with water. Close the lid and vent. Push the manual button and adjust time for 6 minutes and naturally release the pressure. 
  • Add oil, water, salt, garlic powder and broccoli into a non-stick pan and stir them a little bit. Then, cover the lid and cook for 2 minutes. After, set them aside. 
  • Pan fry the marinated chicken or grill them.

What kind of rice do you use?

I used Japanese rice. They are shorter and wider than Jasmine rice. Usually, the USA branded Japanese rice are U.S. Botan Calrose, Nishiki, and Kokuho Rose. You can use Jasmine rice or other rice if you want. 

What goes good with teriyaki chicken and rice?

Vegetables always go well with teriyaki chicken and rice. This time I used broccoli. You can use frozen mixed vegetables, snow peas, carrots, baby bok choy, choy sum, gai lan or your favorite vegetables.

Can I use chicken breast instead of thighs? 

Yes, you can use chicken breast. Personally, I love chicken thighs because it has better texture.

How long should I marinate the meats?

The best result is to marinate the meats overnight or 8 hours. If not, marinate at least for 15 minutes before cooking.
