Although there is no butter in this dairy-free vegan apple crumble, the sweet raisins give the soft apple filling a burst of sweetness, and the pecan nuts give the topping an additional crunch.

For the filling
- 1kg/2lb 4oz Bramley apples, peeled, cored and cut into small cubes
- ½ lemon, juice only
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 80g/2¾oz light brown sugar
- 2 tbsp plain flour
- 70g/2½oz raisins
For the crumble topping
- 50g/1¾oz pecan nuts, roughly chopped
- 100g/3½oz plain flour
- 50g/1¾oz rolled oats
- 80g/2¾oz light brown sugar
- 80g/2¾oz vegan margarine, cut into small cubes
Method
- Set the oven’s temperature to 220°C/200°F/Gas 7.
- In a 24 cm (912 in) square baking dish, combine the apples with the lemon juice, cinnamon, ginger, sugar, flour, and 100 ml (312 fl oz) of water. Bake for 15 minutes after stirring.
- Create the crumble topping in the interim. Mixing bowl with all the ingredients should be used. Rub the margarine into the dry ingredients with your fingertips until the mixture resembles breadcrumbs.
- Add the raisins to the cooked apples before topping with the crumble mixture. Bake the apples for 30 minutes, or until completely tender.

This is a tried-and-true recipe with some helpful tips to make a crumble that tastes just like Grandma’s (or better!) This substantial crumble can feed eight people, but it also freezes well and lasts for a few days in the refrigerator, so you may enjoy crumble moments all week long.
WHAT YOU NEED TO MAKE YOUR VEGAN APPLE CRUMBLE
INGREDIENTS
Apples I’ve always used half and half cooking apples and eating apples in crumbles and pies, and have done so here. The cooking apples are tart, and turn quite mushy as they cook. The eating apples are much sweeter and hold their shape. So when you use both, you get a mushy, apple-y sauce with beautiful chunks of firm apple, and just the right level of sweetness. I used Bramleys and Braeburns, but any good eating apples will do.
Cornflour is a secret ingredient in the apple filling to give you a glossy thickness to the apple ‘sauce’. If you don’t have any you can just leave it out but it really does add something lovely to the filling.
Apple Juice is used here to add an extra apple-y kick to the filling, (though you can just substitute with water if you don’t have any handy).
Dairy-free butter The ‘block’ butters are best for rubbing in to flour (rather than a tub of spread). I used the new Flora Plant Butter, but I also love Naturli butter if you can find it.
Dairy-free cream This is the ‘secret ingredient’ in the crumble mix I mentioned. A tip I picked up from master baker Dan Lepard in his book ‘Short and Sweet’* – rubbing some cream (or milk) through the crumble mix to stop it being too powdery, and more crumbly. 2 tablespoon is the absolute maximum though, or it will turn into a ball of dough. If you’re using a food processor instead of rubbing in by hand, go lightly and add it just splash by splash.
VARIATIONS ON YOUR VEGAN APPLE CRUMBLE
There are so many ways to mix up this basic crumble recipe. How about
- adding extra jumbo oats to the crumble mixture and topping it with them to create a crumble top a la flapjack?
- Adding dark chocolate chips to the crumble mixture and serving it with chocolate custard (your preferred vegan custard blended with melted dark chocolate)?
- For some variety, add blackberries, raspberries, or cherries to the apple mixture.
- use pears in instead of (or in addition to) apples?
FREEZING YOUR APPLE CRUMBLE
This crumble can be frozen both before and after cooking; what a joy it would be to pull it out of the freezer on a chilly night!
If you freeze food before cooking, you must completely defrost it before putting it in the oven; otherwise, the center will remain frozen while the edges burn.
After cooking, you may just microwave the food to defrost and reheat. The treat will still be delicious even though it won’t be quite as crunchy and crumbly as when you first baked it.

OATMEAL BASE

- The dry ingredients for the bar base, including flour, quick oats, baking powder, cinnamon, and salt, should be combined in a large mixing basin. The melted vegan butter and maple syrup are then added, and everything is thoroughly mixed until a wet dough forms. The dough should be pressed into the prepared baking dish after being lined.
