WATERMELON SALAD WITH BLUEBERRIES AND BASIL
How would you like a simple, refreshing summertime treat? This sweet but tangy gluten free Watermelon Salad is super easy to toss together with only four ingredients! You can make it in ten minutes or less!
I love this salad because I can throw it together so quickly! And who doesn’t love watermelon! Watermelon can be a messy food, usually to be eaten outdoors, but this salad is a little more refined.
This is a vegan salad, so it’s free from dairy and eggs as well as gluten, nuts and soy. It was one of those happy accidents that sometimes happens in the kitchen through experimenting with the ingredients I happened to have on hand. As we were chopping up a fresh watermelon to enjoy, I tried a little of this and a little of that until I felt it had reached perfection!
ONLY 4 INGREDIENTS!
- Watermelon – Choose a fresh ripe watermelon. It should feel heavy for its size, have a nice, creamy yellow spot where it sat on the ground, and should give a deep, hollow sound when you tap it. A “seedless” watermelon is preferred.
- Blueberries – Use fresh blueberries. I don’t recommend frozen ones here.
- Basil – A few leaves freshly plucked from a basil plant add wonderful flavour and aroma. The smaller, newer leaves taste best.
- Balsamic Vinegar – A good quality balsamic vinegar is important here. Experiment to discover what kind you like best. I’ve used both red and white ones. The last time I made this salad, I used a nice, white, peach balsamic. It was delicious!
QUICK, EASY STEPS
Chop some watermelon.
Add some blueberries.
Sprinkle on a little chopped basil.
Drizzle with a good balsamic vinegar.

- 1⁄3 cup cubed feta cheese
- 1⁄3 cup thinly sliced red onion
- 2 tbsp olive oil
- 1 tsp lemon zest
- 2 tbsp lemon juice
- Pinch of hot pepper flakes
- 2 cups cubed seedless watermelon
- 1 cup fresh blueberries
- 1 cup chopped cucumber
- 1⁄4 cup loosely packed, thinly sliced fresh basil
- Toss together feta, red onion, oil, lemon zest, lemon juice and hot pepper flakes. Let stand for 10 minutes.
- Toss together watermelon, blueberries, cucumber and basil; transfer to small serving platter. Top with feta mixture.
Substitute mint for basil if desired.
Substitute lime for lemon if desired.

How to cut watermelon
I used to use a melon baller to prep watermelon for fruit salad, but I felt like I was wasting a lot of the fruit.
- Cut the watermelon in half lengthwise. Place it cut side down. Slice it lengthwise, then crosswise, approximately every 2 inches.
- Separate the cut fruit into spears.
Now when you’re ready to make the salad, take each spear and cut in into cubes. Not only is this method easy, you’ll get the maximum amount of fruit from the melon.
To make this recipe, all you need to do is combine 5 ingredients in a bowl:
- Lime (both the zest and the juice)
- Pure maple syrup (a natural vegan alternative to honey)
- Fresh mint leaves
Don’t forget to zest the lime before you squeeze out the juice.
While you can use your fingers or a knife to tear or chop the mint, I like to use herb scissors. This inexpensive gadget is great for quickly cutting fresh herbs while preventing bruising and discoloration.

This recipe is very versatile and can be customized to suit your tastes. For variety, add in any of the following ingredients you like:
- Baby spinach
- Vegan feta cheese, either store-bought or make your own Tofu Feta
- Sliced English or Persian cucumbers
- Fresh basil leaves
- A drizzle of olive oil
- A few pinches of salt and/or chili powder
Leftover fruit salad can be covered and refrigerated for 2 to 3 days. However, some of the liquid will release from the fruit, so you may enjoy it best the first day. Freezing is not recommended.

Seedless watermelon is not genetically modified. As explained in Where does seedless watermelon come from?, “a seedless watermelon is a sterile hybrid which is created by crossing male pollen for a watermelon, containing 22 chromosomes per cell, with a female watermelon flower with 44 chromosomes per cell. When this seeded fruit matures, the small, white seed coats inside contain 33 chromosomes, rendering it sterile and incapable of producing seeds.”
