There are some recipes I make and then forget all about them….not this one. In fact, my husband has been BEGGING me for weeks to PROMISE to make this Watermelon Salad recipe again.
Which is not a problem because I only got to take a few bites of this one before he devoured the whole bowl himself. And since it takes minutes to whip up (especially if you buy precut watermelon!!!) I don’t mind throwing it together on the regular.
This Watermelon Feta Salad recipe is made with just a handful of ingredients that are easy to find.
You will need:
- Watermelon
- English Cucumber
- Blueberries
- Feta
- Basil
The Watermelon Salad dressing is made with just apple cider vinegar, honey, olive oil, salt and pepper.
The dressing isn’t absolutely necessary because this salad is amazing all on it’s own but it definitely pulls all the flavors together into one cohesive dish!
How To Make It
This easy salad is ready in about 15 minutes. Most of the time will be spent chopping so it’s fairly simple.
Cut the watermelon into bite sized pieces or scoop it out with a melon baller. Add to a large bowl.
Dice the cucumber into bite sized pieces and add to the watermelon.
Add the blueberries to the salad.
Cube the feta cheese into 1/2 inch pieces and add to the salad bowl.
Whisk the dressing ingredients in a small bowl.
Pour the dressing over the salad.
Chop the basil and add to the salad.
Toss the salad to combine the ingredients.

English Cucumber vs. Regular Cucumber
So, the English cucumber used in this recipe is the same variety you’ll find wrapped in plastic wrap at the store. They don’t have a waxy coating so there’s no need to peel them and the seeds are digestible so you won’t have to scoop them out.
Regular cucumbers have a tougher skin that’s coated with wax so they do need to be peeled and they have a ton of seeds. You would need to take the extra step to scoop them out.
