Watermelon Mango Feta Salad

Fresh and nutritious, watermelon mango feta salad. This dish mixes the sweet watermelon, the fruity mango, and the tangy feta to provide a delicious flavor combination. One of my favorite salads for summer is this one!

INGREDIENTS FOR THE SALAD

  • watermelon, cubed 1 inch and seeds removed
  • mango, sliced thin
  • mixed field greens
  • raspberry vinaigrette (recipe below, or use your own)
  • feta cheese
  • candied pecans (method below)

INGREDIENTS FOR THE VINAIGRETTE

  • 1 cup fresh raspberries
  • 1 tbsp granulated sugar
  • 3/4 cup good balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tbsp honey
  • 1/2 tsp kosher salt
  • 1 tbsp fresh mint, chopped

INGREDIENTS FOR THE CANDIED PECANS

  • 1 lb pecan halves
  • 2 cups sugar
  • 4 cups water

DIRECTIONS FOR THE CANDIED PECANS

  1. 4 cups of water and 2 cups of sugar are heated in a pan.
  2. Pecans are next added and the mixture is brought to a boil.
  3. The pecans are finished when you can crack them open and the middle is no longer white.
  4. Pecans should be removed from liquid and placed on a sheet pan with parchment paper.
  5. Bake the pecans at 275° for 20 to 30 minutes, or until they are no longer sticky to the touch.

DIRECTIONS FOR THE VINAIGRETTE

  1. Combine the sugar granules with the fruit.
  2. Set aside and give yourself around 30 minutes to rest.
  3. After 30 minutes, use a fork to crush the berries and then whisk in the remaining ingredients.

ASSEMBLE THE BEST EVER WATERMELON FETA SALAD WITH MANGO

  1. Place the field greens on a platter and toss with the raspberry vinaigrette. There should be two full cups of lettuce in each salad.

Ingredients  1x2x3x

  • 1 watermelon medium sized, about 8 cups, cut into small chunks
  • 2 large mangoes pitted and skins removed
  • 1 and ¼ cups fresh strawberries stems removed and chopped
  • 1/3 cup olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 1 and ½ cups feta cheese crumbled
  • ½ cup mint leaves chopped

Instructions 

  • Mix the olive oil, lemon juice, salt, and pepper in a small bowl.
  • Combine the strawberries, mango, and watermelon in a big bowl. Gently stir. Add the dressing and stir.
  • Add feta cheese and mint leaves as garnish.
