WATERMELON LIME MINT SALAD

Hi Everyone! I am already thinking about perfect Summer salads even as we are still in the midst of Spring.

There are only 5-6 ingredients to this salad some of which are optional and it only take minutes to prepare.

To save time you can even purchase pre-cut watermelon from the grocery store which I have done on occasion.

The optional ingredients (kosher salt, sugar, feta cheese) in the recipe serve to heighten the sweetness of the watermelon flavor.

If you have a watermelon that is very ripe and sweet you might be able to forgo the sugar.

The small amount of salt serves to make the sweetness come out more and goes with the lime flavor.

INGREDIENTS

  • 6 cups cubed ripe watermelon, seeds removed
  • 1 lime fresh squeezed, seeds removed
  • 1 1/2 teaspoons dried mint, you can substitute 4.5 teaspoons fresh mint
  • 1/2 teaspoon granulated white sugar, optional, I prefer organic sugar
  • 1/8 teaspoons kosher salt, optional

FOR SERVING

  • feta cheese crumbles, optional, amount to taste
  • lime wedges

If you’ve never tried watermelon in a savory setting, you have to make this recipe ASAP. Juicy & fresh, the melon goes SO well with the other creamy, crisp, tangy, and spicy components in this salad. Here’s what makes it so delicious:

  • Red onion, for a sharp bite of flavor and crispy texture
  • Cucumber, for a cool, crisp addition
  • Feta cheese, for a creamy, tangy element
  • Avocado, for extra creaminess. Plus watermelon + lime + avocado = a match made in heaven.
  • Mint & basil, for fresh herbal notes (Mint & watermelon is one of my favorite combos too!)
  • Serrano pepper, for a little heat (if you like, these are optional)
  • And a bright lime dressing, to tie it all together.

This watermelon feta salad is a great one to play with. Here are some of my favorite ways to change it up:

  • Don’t like spice? Skip the chile, and this watermelon salad will still be delicious.
  • Add a little crunch with a handful of toasted walnuts or cashews.
  • Make this salad a full meal by serving it on a bed of arugula with some quinoa mixed in.
  • Or change up the fruit and substitute strawberries for the watermelon.

Call me unadventurous, but I had never even heard of a watermelon feta salad before versions of it started popping up on food blogs everywhere. Even then, the very thought of it gave me pause. Watermelon, with salty cheese? Yeah, right.

But watermelon sprinkled with salt is how many people enjoy the fruit, so perhaps it isn’t too far of a stretch to consider that it might be good with salty cheese?

Last week my curiosity was finally satisfied when I was served such a salad at a dinner given by my friend Peg. I couldn’t wait to recreate it! It’s wonderfully refreshing and light, and perfect for heat-wave days like we are having now in California.

The amounts given here are truly just guidelines. Feel free to stretch or diminish depending on your taste and the ingredients you are working with.

To experiment further, try adding a handful of pitted kalamata olives to the salad!

Ingredients

  • 1/2 cup red onion. chopped
  • 1/2 cup lime juice (4-6 limes, depending on how big and juicy the limes are)
  • 8 cups watermelon in 1-inch cubes (about 1/4 medium watermelon), black seeds removed if there are any
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, thinly sliced
  • 1/2 cup fresh parsley leaves, chopped

Method

  1. Soak the chopped red onion in lime juice:Soak onion in lime juice while you are prepping the other ingredients, about 10 to 15 minutes.
  2. Gently combine all ingredients into a large serving bowl:Serve immediately. Salad will get soggy if kept overnight.
